CHICKEN PAD THAI CHICKEN NOODLES (452 cals)

INGREDIENTS

(SERVES 4)

  • 1 packet of street kitchen pad thai kit (coles)

  • 500g chicken breast

  • 200g Erawan pad thai rice noodles - woolworths

  • 50g bean sprouts

  • 4 spring onions

  • 2 eggs

  • 1 medium carrot grated

  • 30g peanuts unsalted

DIRECTIONS

  1. Cook packet according to the instructions and cook chicken breast on a pan with beans, spring onions, carrots and eggs.

  2. Once noodles are cooked, add to the pan and mix well with all other ingredients.

  3. Top with peanuts.

  4. If you want to just make 1 serve, divide each ingredient by 4.
