cheesy scrabbled eggs

INGREDIENTS

  • 2 medium eggs

  • 60ml of egg whites

  • 25g light tasty cheese

  • 30g avocado

  • 100g tomatoes (diced)

  • x2 slices of Coles 85% Lower Carb High Protein Loaf OR Burgen Lower Carb High Protein Sunflower & Linseed Bread Loaf

  • 5g Nuttelex lite

DIRECTIONS

  1. In a mixing bowl mix two full eggs, egg whites & cheese (add salt & pepper)

  2. On a non stick pan scrabble the eggs & half way through add the diced tomato

  3. Toast bread & spread nuttelex lite

  4. Top with egg & tomato scrabble mix and avocado

  5. Season with herbs of choice
