CHILLI PRAWN LINGUINE WITH ARUGULA SALAD (364 cals)

INGREDIENTS

(SERVES 6)

  • 500g fresh prawns

  • 280g linguine - barilla

  • 200g snow peas and sugar snap peas

  • 2 tbsp olive oil

  • 2 garlic clove

  • 1 full red chilli

  • 100g spinach

  • 500g cherry tomato

  • 30ml parmesan cheese

  • Handful fresh basil

DIRECTIONS

  1. Whilst you cook pasta, add peas, garlic and chilli to a pan and cook over gentle heat. Tip the cooked prawns on the pan and add cherry tomatoes.

  2. Drain pasta, add to the pan and add in the chicken stock if the pasta is too dry.

  3. Top with basil leaves and cheese, then serve it with arugula salad. (found in mains tab also)

  4. If you want to make 1 serve, divide each ingredient by 6.
