HEALTHY LAMB SOUVLAKI (452 cals)

INGREDIENTS

(SERVES 4)

  • 200g black swan tzatziki

  • 1 tbsp ground cumin

  • 1 clove garlic

  • 1 lemon, 2tbsp juice

  • 1 tbsp olive oil

  • 500g lean lamb backstrap diced or strips

  • 4 simsons pantry high protein low carb (45g)

  • 200g cucumber

  • 200g tomato

  • 40g kalamata olives

  • 50g light feta cheese

  • 50g red onion

  • 1 tsp salt

DIRECTIONS

  1. Combine cumin, garlic, lemon, oil and salt to make the marinade.

  2. Add lamb and mix to combine.

  3. Cover and refrigerate for 30 mins.

  4. Chop cucumber, tomatoes and onion and leave some aside and add the olives.

  5. Fry off lamb and cook until slightly pink inside.

  6. Heat wraps in microwave and seperate all ingredients evenly across 4 wraps and top with tzatziki.
